Coffee
The quality of Pareo blends comes from the selection of the finest raw materials, processed with skill and care. They are made up of seven varieties of raw beans from different origins. The main countries of origin are: Uganda, Tanzania, India, Santos, and Guatemala.
And it is precisely Guatemala that is the land of a coffee of the highest quality:
the Huehuetenango, appreciated by a niche of expert customers and marketed on the fair trade market.
Huehuetenango coffee from Guatemala is a Slow Food International Presidium. Historical sources mention the cultivation of Huehuetenango, dating it back to as early as 1773 by the Jesuit fathers.
The Presidium coffee is obtained from Coffea arabica plants grown in the shade of tall trees. The harvest is manual: the cherries are picked one by one and placed in wicker baskets tied to the hips.
The beans are extracted from the berries by hand, through a delicate fermentation process that begins within four hours of harvesting and lasts 24-36 hours. After pulping, the beans dry in the sun for at least three days, continuously turned with a rake.
